Cooktop Cove: Put old bread in a slow cooker before bed & wake up to a yummy breakfast

For those who aren't morning people, waking up in the morning is hard enough, let alone having to worry about preparing breakfast for yourself or your family. Typically, a lot of people settle for just a cup of coffee or a processed breakfast bar. However, why settle for the mediocre when breakfast is supposed to be the most important meal of the day?
That's where this French toast recipe comes in. In this easy recipe, the slow cooker does the work for you! Getting its sweetness from the vanilla and cinnamon, the toast itself is great for those avoiding refined sugar, but also makes an excellent base for a healthy dose of syrup and powdered sugar for anyone who wants to indulge.
Slow cooker French toast
Prep Time: 10 minutes
Cook Time: 2 hours
Serves: 6-8
Ingredients
Bread of choice (about 3/4 of a loaf)
8 eggs
1/2 cup milk
4 tsp vanilla extract
2 tsp ground cinnamon
1/2 tsp ground nutmeg
Optional:
2 teaspoons orange zest instead of nutmeg
Instructions
1. Fill greased 6-quart slow cooker with bread.
2. Whisk together all other ingredients in a small bowl. Begin with eggs.
Then add the other dry ingredients and whisk.
3. Pour over bread making sure all pieces are saturated.
4. Cover with dishtowel before covering with lid.
5. Cook on high 2 hours.
Once done, uncover and marvel at your French toast!
Serve with maple syrup and powdered sugar, or try it with apricot preserves on top.
